Vinification

"Quality does not allow for any compromise"
The first selection is already performed in the vineyard. The harvest of the total  50 ha of vine areas is done by hand and in an exceptionally meticulous manner. The grapes are chilled, delivered in small boxes of 15 kg each and submitted to a rigorous selection at two sorting tables (again by hand).

During the variety specific fermentation, both, mild must and mash treatments as well as modern know-how is used in order to produce fruity, elegant and full bodied wines. Subsequently, the wines ripen according to their process type either in French barrique or in stainless steel. As far as vintage and weather conditions permit, a latest harvest sweet wine is vinificated: the Grand Vin TBA.
